We vinify our Pinot noir grapes both in rosé, with eight-hour press maceration, and in red, prolonging the contact with the skins in steel vats for four days, during which time the must begins to ferment with native yeasts. The two processes are then assembled, with a small addition of Chardonnay (20%). No malolactic fermentation.
